Description

These paleo-friendly egg muffins are made with only 4 ingredients and are so quick, easy and healthy! Perfect for a protein-packed breakfast on the go!

Ingredients

  • 1 cup Caulliflower, Cut Into Bite-sized Pieces
  • 3  Large Eggs
  • 1 cup Kale, Lightly Packed And Torn Into Bite Sized Pieces
  • ¾ cups Cooked Old Fashioned Ham, Heavily Packed And Cut Into Bite-sized Cubes
  • Salt And Pepper

Preparation

1. Preheat oven to 400ºF and generously spray a muffin tin with cooking spray. Set aside.
2. In a small food processor (mine is 3 cups), process cauliflower until broken down and it resembles rice. Set aside.
3. In a large bowl, whisk eggs. Add in kale, ham, cauliflower rice and season with a pinch of salt and pepper. Mix well.
4. Divide mixture between 6 muffin tins* and then bake until eggs feel set, about 20 minutes.
5. Let cool in the pan and then devour.

Note: I found it easiest to use a spoon to divide pieces of ham and kale between muffin cavities first, and then pour remaining egg/cauliflower mixture over each muffin cavity. This ensures they are all the same size.
