Description

These Low-fat Buffalo Chicken Bites are so easy to make and are perfect to serve at your next party!

Ingredients

  • 3 cups Cooked And Shredded Chicken
  • 3 ounces, weight Fat-free Or Reduced Fat Cream Cheese
  • ¾ cups Reduced-fat Cheddar Cheese
  • ⅓ cups Buffalo Wing Sauce (or To Taste)
  • ¼ cups Sliced Green Onion (optional)
  • 1 cup Whole Wheat Flour
  • 4 whole Eggs, Lightly Beaten
  • 3 cups Panko Breadcrumbs
  • Ranch Or Blue Cheese Dressing, For Dipping

Preparation

1. Preheat oven to 350ºF. Prepare a large baking sheet with a baking mat or parchment paper.

2. In a large bowl, combine the chicken, cream cheese, cheddar cheese, and the Buffalo sauce (and onion, if using).

3. Add the flour, eggs, and panko separately to 3 shallow bowls. Take the chicken mixture and roll into 1 1/2-2 inch balls. Roll each ball in the flour, then the egg, and then the panko. Place on a baking sheet and spray around each ball with olive oil spray (this helps brown the panko crumbs).

4. Bake for about 15 minutes, then turn the balls over and bake for another 5 or 10 minutes until they are golden brown. Serve with ranch or blue cheese dressing for dipping!

These are delicious! Mine didn’t brown up very well, but the outside was crispy and that’s what mattered. I used maybe a half a cup of flour, not even two eggs, and about a half a cup of panko. Will definitely be making these again.

Yum! I’ll definitely be making these again! I cooked mine just a little longer-about 15 mins on both sides. And, I must have made my balls too big because I only used about 1 1/2 cups panko, 2/3 cup flour and two eggs that I had mixed with a tiny bit of water. Thanks, Stephanie!
