Description

This low carb meatloaf is so succulent and flavorful that you’ll forget you are on a diet.

Ingredients

  • FOR THE SEASONED ALMOND CRUMBS:
  • 1 cup Almond Meal
  • ¼ cups Coconut Flour
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano, Crushed With Your Fingers
  • ⅛ teaspoons Thyme, Crushed With Your Fingers
  • 1-¼ teaspoon Salt
  • ⅛ teaspoons Fresh Ground Pepper
  • 1 teaspoon Onion Powder
  • ½ teaspoons Garlic Powder
  • FOR THE MEATLOAF:
  • 1 cup Seasoned Almond Meal Crumbs
  • 1 pound Ground Turkey
  • 1 cup Chopped Spinach
  • 1 cup Shredded Sharp Cheddar
  • ½ teaspoons Salt
  • ⅛ teaspoons Dried Thyme, Crushed With Your Fingers
  • ⅛ teaspoons Dried Basil
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • ⅛ teaspoons Fresh Ground Peppper
  • 2  Large Eggs
  • ⅓ cups Water
  • 2 Tablespoons To 4 Tablespoons Ketchup

Preparation

Preheat oven to 400ºF and grease a foil lined baking sheet.

Combine ingredients for seasoned almond meal crumbs. Stir well to combine.

Measure out amount of almond meal crumbs needed for the meatloaf. (Any leftover seasoned almond meal crumbs can be stored in your pantry in an airtight container and used in place of bread crumbs.) Add remaining meatloaf ingredients, except ketchup, to the almond meal and mix with your hands. Form into a loaf and place on baking sheet.

Bake for 25 minutes. Coat top and sides with ketchup and bake another 10 minutes.
