Description

This meatless meal will soothe your craving for an Italian-style pasta but won’t weigh you down. A simple and tasty dinner that comes together in a flash.

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 whole Onions, Sliced
  • 4 cloves Garlic, Minced
  • 4 cups Chopped Swiss Chard
  • 2 cans (14 1/2 Oz. Size) Diced Tomatoes With Juices
  • ¼ cups Dry White Wine
  • ¼ teaspoons Dried Crushed Red Pepper Flakes
  • 8 ounces, weight Gluten-free Pasta (quinoa Or Brown Rice)
  • ¼ cups Pitted And Chopped Olives
  • 2 Tablespoons Pine Nuts

Preparation

1. Heat oil in a heavy large frying pan over medium heat. Add onions and garlic and sauté until tender.
2. Add chard and sauté until it wilts.
3. Stir in tomatoes with their juices, wine and red pepper flakes. Bring to a simmer. Cover and simmer until the tomatoes begin to break down and the chard is very tender, stirring occasionally, about 5 minutes.
4. Meanwhile, bring a large pot of water to a boil. Add the pasta and cook according to package instructions. Drain the pasta.
5. Transfer the pasta to serving bowls. Top the pasta with the sauce mixture, olives and pine nuts (I toasted the pine nuts for extra flavor.) Enjoy!
