Description

No-bake peanut butter balls full sweet health.

Ingredients

  • ½ cups Coconut Flakes
  • 1 cup Old Fashioned Oats
  • ¼ cups Ground Flax Seed
  • ¼ cups Pepitas
  • ⅓ cups Honey
  • ½ cups Creamy Peanut Butter
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Ground Cinnamon
  • ⅛ teaspoons Salt

Preparation

Heat a small skillet over medium-low heat. Add coconut and heat it. Make sure to watch it carefully, stirring often, until the flakes are lightly toasted. Remove from heat.

In a large bowl, stir together the oats, coconut flakes, flax seed, and pepitas. Add the honey, peanut butter, vanilla, cinnamon and salt and stir until it comes together. I used my hands and found that was easier for everything to come together.

Refrigerate for 30-60 minutes and then roll into 1-inch balls. Store in the refrigerator.

If you prefer, you can sub any kind of nut butter, Nutella or Biscoff for the peanut butter. You can also trade in sunflower seeds, almonds, soy nuts, walnuts, etc. for the pepitas.
