Description

Grilled Polenta with Veggies.

Ingredients

  • 18 ounces, weight Prepared Polenta, Cut Into 12 Discs
  • 1 pint Small Heirloom Tomatoes (or Cherry Tomatoes, Or Grape Tomatoes)
  • 1 pound Fresh Asparagus, Stems Trimmed
  • 1 whole Large Zucchini, Cut In Half Lenghtwise
  • 1 whole Yellow Squash, Cut In Half Lengthwise
  • 1 whole Red Bell Pepper, Cut In Half And Seeded
  • ½ heads Radicchio, Cut Into Quarters
  • Olive Oil, As Needed For Coating
  • Salt And Pepper, to taste
  • Crumbled Feta, For Topping (optional, Omit If Vegan)

Preparation

Heat a grill pan of BBQ grill over medium heat. Brush polenta slices (both sides) and all veggies with olive oil to coat.

Place polenta and all veggies on grill. Cook until grill marks are visible, about 10 minutes. Turn over and repeat on other side. Check periodically, the radicchio may cook quicker than other veggies.

Cut zucchini, squash and red pepper into desired size pieces. Place 3 slices of polenta on each plate. Divide vegetables among plates. Sprinkle with feta, if using, and serve. (You may want to drizzle a little olive oil or balsamic vinaigrette on top.)

This was really good! I actually used a little different veggie combo because of what I had, and I made my own polenta (it’s really easy!!). AND I ended up grilling it indoors because it was too windy to do it outdoors—tasted fantastic.
