Description

A delicious mac ‘n cheese that is vegan and gluten-free!

Ingredients

  • 14 ounces, weight Gluten-free Pasta, Cooked According To Package Instructions Then Drained
  • 3 Tablespoons Vegan Butter
  • ¼ cups Gluten Free Flour
  • 2 cups Non-dairy Milk
  • 1-½ cup Vegan Shredded Mozzarella Cheese
  • 1 cup Vegan Cheddar Cheese, Shredded
  • ½ cups Gluten-free Breadcrumbs
  • Salt And Pepper

Preparation

Preheat oven to 350 F. Grease an 8 x 8 baking dish with nonstick cooking spray and set aside.

In a large pan over medium heat, melt butter. Then add gluten-free flour and stir to create a roux (paste). Slowly add milk and mix flour/margarine mixture in well. Reduce heat to medium and let sauce thicken. Once thick, remove from heat and stir in cheeses and salt and pepper to taste. Mix until cheese is melted. Add the cooked and drained pasta to the sauce and mix to coat.

Pour macaroni into the prepared baking dish. Sprinkle with breadcrumbs and bake for about 15 to 18 minutes, or until bubbly.
