Description

These gluten free, grain free and high protein stuffed peppers are quite colorful and festive, and mighty tasty!

Ingredients

  • 2 cans (4 Oz.) Cans Diced Green Chiles
  • 1 pound Ground Turkey
  • 1 cup Cilantro, Finely Chopped
  • ½ cups Onion, finely chopped
  • 2 teaspoons Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Celtic Sea Salt
  • 8 whole Sweet Bell Peppers (green, Orange, Red Or Yellow)

Preparation

In a medium sized bowl mix diced chiles with turkey, cilantro, onion, cumin, chili powder and salt.

Cut the tops off of the peppers, clean out the seeds and membranes and set aside.

Place peppers in an 11 by 7-inch Pyrex baking dish.

Stuff the peppers with the turkey mixture; place tops on the peppers to close.

Bake at 350° for 1 hour.

Serve!

This was very tasty and super easy to prepare!!! The peppers baked perfectly and made a wonderful presentation. We thought that it needed just a touch of acidity, so when we cut into them we added a few dollops of mild salsa. My husband had his with some leftover cilantro rice. He said it was a great addition because it soaked up all of the juices.

I loved this healthy version of stuff peppers. My hubby thought it was okay, but it might be just too healthy for him ;-) . Even my 3 year old ate it. I filled 6 large peppers. The presentation is pretty too. Thanks for sharing.
