Description

Crunchy “granola” bars chock full of seeds, cranberries and coconut. Sweet, tart, gluten-free, paleo, grain-free, vegan and nut-free.

Ingredients

  • 1 cup Sunflower Seed Kernels
  • 1-¼ cup Roasted Pepitas (Pumpkin Seeds)
  • ¾ cups Dried Cranberries
  • 1-¼ cup Unsweetened Coconut Flakes
  • ½ cups Pure Maple Syrup
  • 1 teaspoon Pure Vanilla Extract
  • ½ teaspoons Sea Salt

Preparation

Preheat oven to 350ºF.

In a large mixing bowl, combine all of the ingredients until evenly distributed. Line a 9×13 inch baking dish with parchment paper, allowing the paper to hang over the sides.

Using a silicone spatula, transfer the mixture to the prepared baking dish and spread it evenly. Bake for 20 minutes, or until the bars are lightly golden brown in color. Remove from oven.

Remove bars from the dish using the paper as a handle and allow to cool. Slice into 12 even bars and refrigerate until cold.
