Description

These are so simple to prepare and will be a big hit with your family!

Ingredients

  • FOR THE SEASONED BEANS:
  • 1 can (15 Oz. Size) Black Beans
  • 2 teaspoons Hot Sauce
  • 1 teaspoon Cumin
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Chili Powder
  • ½ teaspoons Smoked Paprika
  • FOR THE SAUCE:
  • 2 Tablespoons Sour Cream
  • 1 teaspoon Hot Sauce
  • FOR THE BOWL ASSEMBLY:
  • 2 cups Cooked White Rice
  • 2 cups Shredded Rotisserie Chicken
  • ½ cups Shredded Cheese
  • 1 cup Chopped Tomatoes
  • 1 cup Chopped Avocado
  • ¼ cups Chopped Green Onions
  • ½ cups Crushed Tortilla Strips Or Chips

Preparation

Heat a small or medium saucepan to medium heat. Add the un-drained can of black beans, hot sauce and spices. Reduce heat to medium low and let it simmer for at least 15 minutes, no more than 30 minutes.

For the sauce: Combine the sour cream and hot sauce in a bowl. Refrigerate until ready to serve.

For the assembly of the Loaded Tex Mex Bowls:
Add ½ cup cooked rice, ½ cup seasoned black beans and 1/2 cup of shredded rotisserie chicken into four deep bowls. Divide the shredded cheese, tomatoes, avocado, green onions, tortilla strips (or chips) and the Creamy Tex-Mex Sauce evenly among the four Tex-Mex Bowls.
