Description

Using anitoxidant rich low-carb cauliflower, this recipe for dirty rice makes one heck of a savory Paleo/primal side dish.

Ingredients

  • 2 Tablespoons Olive Oil
  • 4 cloves Garlic, Minced
  • 1 cup White Onion, Diced
  • 2 whole Celery Stalks, Chopped
  • 1 cup Green Pepper, Diced
  • 1 cup Red Pepper, Diced
  • 1 bunch Scallions, Chopped
  • 3 cups Cauliflower, Riced With Your Food Processor Or Box Grated
  • 1 teaspoon Fresh Thyme
  • 1 whole Bay Leaf
  • ½ teaspoons Celtic Sea Salt
  • ½ teaspoons Pepper
  • ¼ teaspoons Chili Powder
  • ½ teaspoons Cumin
  • 2 cups Chicken Stock Or Vegetable Stock

Preparation

Heat olive oil over medium heat in a large skillet. Add garlic, onion, celery, peppers and scallions; saute until everything is soft.

Stir in the riced cauliflower, adding thyme, bay leaf, salt, pepper, chili and cumin. Add in the chicken stock (or vegetable stock).

Allow to simmer over medium-low heat, stirring frequently, for 30 minutes or so or until liquid is cooked down.

Wow! This was sooo good. I served this with spicy, broiled shrimp and knocked everyone’s socks off. What a great way to use cauliflower! The only thing I did differently way add a couple of orange bell peppers (in addition to the green and red). Next time, I won’t measure the cauliflower. I’ll just grate an entire head. Thank you so much!
