These delicious naturally sweet pancakes are the perfect breakfast for gluten (and dairy) free diets!
Heat frying pan or griddle to medium heat.
Put all of the ingredients in a blender (except oil) and blend thoroughly. Place the coconut oil in the pan and allow to melt. Pour about 1/3 cup portions of batter from the blender onto the pan, and fry until golden and thoroughly cooked on each side.
These are lovely with a little maple syrup or jam, or just plain. Great healthy breakfast for babies and toddlers, too!
