Description

Revamp your breakfast with this healthy and allergen-free alternative to a popular side dish: Jicama Home Fries. Add some avocado on top or mix in some ground sausage to make this a heartier main course too!

Ingredients

  • 2-½ cups Jicama, Peeled, Diced Into 1/2" Pieces
  • 2 Tablespoons Water
  • 1 whole Onion, Diced
  • 1 whole Bell Pepper, Stem And Seeds Removed, Diced
  • 5 whole Baby Bella Or White Mushrooms, Diced
  • 1 teaspoon Chili Powder
  • ½ teaspoons Paprika Or​ ​smoked Paprika
  • ½ teaspoons Garlic P​​owder
  • ½ teaspoons Dried Oregano
  • ¼ teaspoons Sea Salt And Black Pepper (each)
  • 3 Tablespoons Fresh Parsley, Minced
  • Cooking Oil (I Use Coconut), For Drizzling Into Pan

Preparation

Heat a large skillet (use one with a lid—you’ll need it in a moment) over medium heat. Place diced jicama and a drizzle of oil (I use coconut oil) in the skillet. Saute for 2 minutes, stirring occasionally. Then add the water and cover. Allow to soften for about 8 minutes over medium heat.

​Remove lid and add a little more oil. Place onions, bell peppers, and mushrooms into skillet and saute for another 8 minutes, until the jicama begins to lightly brown, stirring occasionally.

Add seasonings and keep sauteing until browned to your preference. Top with parsley and serve.
