Description

These oat, peanut buttery bars are a family favorite. They can be somewhat crumbly if not chilled. Hard to believe something so good would be good for you.

Ingredients

  • 3-½ cups Gluten Free Oats
  • ¾ cups Raisins (or Craisins)
  • ⅔ cups Sunflower Seeds (unsalted)
  • ½ cups Sesame Seeds, Toasted
  • ½ cups Pumpkin Seeds, Chopped
  • 3 Tablespoons Flax Seed (Whole Or Ground)
  • 1 Tablespoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1 cup Shredded Coconut (optional)
  • 1 cup Almonds, Chopped
  • 1-½ cup Creamy Natural Peanut Butter
  • 1 cup Honey
  • 5 Tablespoons Butter, Melted
  • 1 package 10 Oz. Sunspire Grain Sweetened Chocolate Chips (or Regular Chocolate Chips)

Preparation

Mix oats, raisins, sunflower seeds, sesame, pumpkin and flax seeds in a large bowl. Add cinnamon, salt and shredded coconut, mix well and set aside.

In a medium bowl mix chopped almonds, peanut butter, honey and melted butter; mix well. Pour mixture into a large bowl, over the seed mixture. Stir until well combined.

Press into a 9 x 13″ greased pan and bake at 350 degrees (F) for 15 minutes.

Remove from oven and sprinkle chips over bars. Return to the oven for additional 2-3 minutes or until the chips are soft. Spread softened chips evenly over the bars and cool. Cut into bars and refrigerate.

This looks really good, I may have to make these this weekend! Great snack for my daughter between school and work.

These are a great snack, especially for the kids. My family really liked them. I like the versatility of the recipe as well. For the nuts/seeds I didn’t have on hand, I just subbed with the various nuts I do keep on hand.

I’ve been making these for a few years and LOVE, love, love them. It’s sweet enough that you feel like you’re getting a great treat and healthy enough that you know you’re choosing something good for yourself.

I use regular oats and semi-sweet chocolate chips for the top which makes them not gluten-free, but my family doesn’t have that need.
