This Green Eggs recipe for St. Patrick’s Day is a colorful, fun, super healthy, and hearty way to get in the green veggies at the start of your day.
Place eggs, kale leaves and salt in your Vitamix (or blender). Blend on high until smooth.
Heat a bit of oil in a frying pan over medium heat. Pour egg mixture into pan. Allow eggs to cook a bit, then scramble them around in the pan. Cook eggs to your preferred doneness. Serve!
