Description

A seasonal spinach and garlic quiche baked in a delicious gluten-free almond/coconut crust. A great way to celebrate meatless Monday!

Ingredients

  • FOR THE CRUST:
  • 1 cup Almond Flour
  • ½ cups Coconut Flour
  • ½ cups Parmesan Cheese, Shredded
  • 1 teaspoon Salt
  • ½ teaspoons Baking Soda
  • ¼ cups Grassfed Butter, Melted
  • ½ cups Water
  • FOR THE FILLING:
  • 5  Eggs
  • 2 Tablespoons Avocado Or Coconut Oil
  • 3 cloves Garlic, Minced
  • 2 bags (1 Lb. Size) Fresh Spinach
  • ¼ cups Cream Cheese
  • 1 teaspoon Salt
  • ½ cups Shredded Cheese (I Used Parmesan And Cheddar)

Preparation

For the crust:
Heat oven to 350 F. Mix flours, cheese, salt and baking soda in a large bowl. Mix in melted butter and add enough cold water until crumbs start to stick together, but not so much that the dough becomes watery. Press into the bottom and up the sides of a greased 9-inch pie or tart pan. Bake for 15 minutes to set. Remove from oven. Press down any air bubbles that may form while cooking and set it aside. Keep the oven on.

For the filling:
While crust is baking, prepare filling. Whisk eggs in a large bowl and set aside.

Heat a large frying pan to medium heat. Sauté garlic in oil for about 1 minute, just until fragrant but not browned. Add spinach and sauté until wilted. Water will release from spinach as it wilts but do not drain! Add cream cheese and salt and mix until melted. Remove from heat and let it sit a few minutes.

Add the spinach mixture into the eggs and stir. Pour mixture into pie crust and top with cheese. Bake at 350 F for 35 minutes or until set. Eggs will puff up while cooking and relax after they sit for a few minutes. Remove from oven and let it sit for 10 minutes before serving. Enjoy!
