Description

Super easy gluten-free mozzarella sticks. My son has recently been diagnosed with celiac disease and I have been working hard in the kitchen to make him some of his favorite foods in gluten-free form. These are so good and easy to make. They are my son’s favorites and my other children (who do not have celiac) even love them!

Ingredients

  • 1 whole Egg
  • 2 cups Rice Chex Cereal
  • 4 Tablespoons Gluten Free Flour
  • 1 Tablespoon Italian Seasoning
  • 8 pieces (1 Oz. Piece) Mozzarella String Cheese (like Frigo)
  • ½ cups Vegetable Oil, For Frying

Preparation

Beat egg in a bowl and set aside. In another bowl, crush Rice Chex cereal until it resembles panko crumbs. Add the gluten-free flour, Italian seasoning and blend it together by hand. Cut each mozzarella string cheese in halves to equal 16 mini pieces. Dip each string cheese piece into the egg and then dredge in the crumb mixture. Place on a plate and put the plate of breaded sting cheese into the fridge to keep cool while your oil is heating up. Heat up oil in a frying pan on medium high heat. Cook half of the mozzarella sticks at a time by placing each one into the hot oil. It will really only take about 30 seconds on each side to cook. Then do the remaining half. Serve with marinara dipping sauce.
