Description

I love the combination of chocolate and coconut. If you love it too, here’s your recipe.

Ingredients

  • 4 whole Egg Whites
  • ⅔ cups Sugar
  • ¼ teaspoons Salt
  • 2 teaspoons Vanilla
  • ¼ cups Coconut Flour
  • 3 cups Sweetened Coconut Flakes
  • 1 cup Casein Free Chocolate Chips
  • 2 teaspoons Instant Coffee, Or To Taste
  • ½ cups SO Delicious Coconut Creamer

Preparation

1. Preheat oven to 350 degrees (F).

2. Beat together egg whites, sugar, and salt until very frothy, 3-4 minutes.

3. Stir in vanilla, coconut flour, and coconut flakes.

4. Roll the mixture into tablespoon-sized balls and drop onto well greased or parchment lined baking sheet.

5. Bake 10-15 minutes, or until tops are golden brown.

6. Cool.

7. Make the ganache: Place chocolate chips and instant coffee in a medium sized bowl.

8. Heat the creamer over medium heat until it reaches a gentle boil.

9. Pour the warm creamer over the chocolate and coffee, whisk until smooth.

10. Dip the bottoms of the macaroons in the chocolate.

11. Place the macaroons chocolate side up on a large plate and refrigerate 1 hour, or until set.
