Description

Delicious, moist, GLUTEN-FREE banana muffins!

Ingredients

  • FOR THE BATTER:
  • 1-½ cup Gluten Free Flour Mix (see Below For The One I Use If You Don't Have One Already)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¼ teaspoons Allspice
  • ¼ teaspoons Cinnamon
  • 3 whole Bananas, Mashed
  • ⅓ cups Melted Butter
  • 1 whole Egg
  • ¾ cups Sugar
  • _____
  • FOR THE GLUTEN FREE FLOUR MIX:
  • 2-¼ cups Brown Rice Flour
  • ¾ cups Sweet Rice Flour
  • ⅔ cups Tapioca Flour
  • ⅓ cups Cornstarch
  • ¼ cups Potato Starch
  • 2 teaspoons Xanthan Gum

Preparation

NOTE: The Gluten Free flour mixture makes more than the 1 1/2 Cups you need for this recipe so don’t just add the entire batch of flour mix ingredients to your wet ingredients!! Combine all of the flour mix ingredients, set 1 1 /2 cups aside for the bread; and store the rest in an airtight container for another recipe.

Preheat oven to 350F.

Combine dry ingredients (1 1/2 cups of the flour mixture, baking powder, baking soda, salt, allspice, cinnamon).

In a separate bowl, combine wet ingredients (bananas, butter, egg) and the sugar.

Mix dry ingredients into wet. Add nuts or chocolate chips or any other optional ingredient.

I typically get 6 jumbo muffins from this recipe and bake them for 30 minutes. If you are making a loaf of bread, it may require more baking time. If you are making mini muffins, they’ll need to bake for 10-15 minutes. Regular sized muffins will take approximately 20 minutes.

I substituted 1 1/4 cups of apple sauce for the banana (because I didn’t have enough banana), added 1 teaspoon of zantham gum (because my gf flour mix doesn’t have it) and added a 1/4 cup of flax meal and they turned out fabulous!! Thanks for the great recipe!
