Description

These apple fritters are really quick to make—just whisk together a batter similar to making pancakes and stir in the chopped apple.

I heated the leftover fritters in the oven next day and had them as a treat breakfast with some dairy free yoghurt and strawberries.

Ingredients

  • 1 whole Apple, Cored And Cut Into Small Cubes
  • 2 teaspoons Cinnamon, Divided
  • 120 grams Gluten Free Plain Flour
  • 40 grams Caster Sugar
  • 1 teaspoon Baking Powder
  • 1 whole Egg
  • 90 milliliters Dairy Free Milk
  • 25 grams Dairy Free Spread, Melted
  • Oil, As Needed For Frying
  • Icing Sugar, For Dusting

Preparation

Toss apple cubes in 1 teaspoon of ground cinnamon and set asid.

Whisk flour, caster sugar, baking powder, remaining teaspoon of cinnamon, egg, milk and melted dairy free spread. Stir through the cinnamon apples.

Heat 1-2 inches of oil in a saucepan over a medium heat. Drop in a little batter; if it sizzles and then rises to the top, the oil is at temperature

Drop heaped tablespoons of the batter into the oil a couple at a time. Cook for 2 minutes, then flip the fritters and cook for another 2 minutes,

Remove from the pan with a slotted spoon and dust with icing sugar.
