Description

A downright healthy cookie with limited added sugar and grains. Low carb. Delicious!

Ingredients

  • 2  Eggs
  • ¼ cups Light Brown Sugar
  • 1-½ Tablespoon Molasses
  • 1 cup Unsweetened Almond Butter
  • 3 Tablespoons Coconut Flour
  • 1-½ teaspoon Ground Ginger
  • 2 teaspoons Ground Cinnamon
  • ¼ teaspoons Ground Cloves
  • ¼ teaspoons Ground Nutmeg
  • ½ teaspoons Baking Soda
  • ½ teaspoons Double-acting Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Raisins

Preparation

Preheat oven to 350ºF. Line a stainless steel baking sheet with parchment paper. Set aside.

In a small bowl, whisk eggs.

In the bowl of a stand mixer fitted with a paddle attachment, add in all of the ingredients (including eggs). Mix until just combined. Do not over-mix.

Using a 1-tablespoon-sized spring-loaded cookie scoop, scoop out level tablespoons of dough. Roll into a ball then gently flatten to a round in the palm of your hand. The dough will likely be sticky. If the dough begins to stick to your hands, very lightly dampen your hands. Place cookies 1 inch apart.

Bake for 8 minutes. Remove from oven. Allow to sit on the baking sheet for 5 minutes before transferring to a cooling rack.
