Description

Delicious, gluten free salad that takes only a couple minutes to whip up!

Ingredients

  • 1-½ whole Cucumbers
  • 1 teaspoon Salt
  • 1 teaspoon Fresh Ground Pepper
  • 1 Tablespoon Fresh Basil, Chopped
  • 1 Tablespoon Balsamic Vinegar
  • ¼ cups Feta Cheese, Crumbled
  • ¼ cups Nuts, Finely Chopped (I Used Walnuts and Pecans)

Preparation

Cut cucumbers in half, lengthwise, then cut each half again to quarter. Then slice all of these into quarter-inch pieces and put in a large bowl. Mix in remaining ingredients.

* You can also add extra ingredients like lemon juice, tomatoes, avocados, etc.

came out pretty good… although.. I feel like it’s not the best looking salad the next day.
