Description

Sweet summer cherries are studded throughout this hearty baked oatmeal. Homemade salted maple almond butter is baked through the center, providing a deep, nutty flavor.

Ingredients

  • 2 cups Dark Sweet Cherries, Pitted And Diced (frozen Also Works)
  • 2 cups Rolled Oats, Certified Gluten Free If Necessary
  • ¼ teaspoons Fine-grain Kosher Salt
  • 1 teaspoon Baking Powder
  • 3 Tablespoons Unsalted Butter, Melted And Cooled
  • ⅓ cups Maple Syrup
  • 2 cups Milk (recommended: 1%)
  • 1 whole Egg (large)
  • 2 teaspoons Pure Vanilla Extract
  • 6 teaspoons Almond Butter

Preparation

1. Preheat oven to 375 F.
2. Grease the bottom of six 8-ounce ramekins with cooking spray.
3. Divide 1 1/2 cups of the cherries into the bottom of the ramekins.
4. Combine the oats, salt, and baking powder in a bowl. Divide it among the ramekins (1/3 cup per ramekin).
5. Combine the cooled brown butter, maple syrup, milk, egg, and vanilla in a bowl with a whisk.
6. Divide and pour the egg mixture over the oats in the ramekins (about 1/2 cup of liquid per ramekin).
7. Place the remaining 1/2 cup cherries on top of the mixture in each ramekin and add a teaspoon of almond butter in the center.
8. Bake for about 30 minutes until just set and golden on top. Serve warm with some milk or vanilla yogurt poured over the top.
