Description

Cauliflower pizza crust.

Ingredients

  • 2 cups Grated Cauliflower, Done Wtih A Hand Held Grater Or In A Food Processor
  • 2 whole Egg Whites
  • 1 cup Low Fat Mozzarella Cheese, Grated
  • 1 teaspoon Oregano
  • 2 teaspoons Fresh Parsley, Chopped
  • 1 Tablespoon Frank's Red Hot Sauce
  • ¼ cups Basil Tomato Sauce Or Enough To Cover The Crust Leaving A Border On The Outside
  • 4 whole Large Mushrooms, Thinly Sliced And Sauteed Until Brown
  • ⅓ cups Fresh Baby Spinach Leaves
  • ⅓ cups Light Feta, Crumbled
  • ⅓ cups Low Fat Mozzarella Cheese, Grated

Preparation

Preheat oven to 450 F.

Cook the grated cauliflower in the microwave for 8 minutes without adding any water. Watch it towards the end to make sure it doesn’t burn. Allow it to cool slightly.

Meanwhile whisk together egg whites, mozzarella, oregano, parsley and hot sauce. Add cauliflower. At this point you can add the mixture into a food processor and finely grind it but I omitted this step.

Press mixture into a 9″ round stoneware pan or shape into a circle on a baking sheet. Bake for 12-14 minutes until lightly brown.

Remove crust from the oven. Spread on tomato sauce and then top with mushrooms, spinach, feta and mozzarella. Continue to bake 3-4 minutes, watching carefully to make sure it doesn’t burn. Place under the broiler to finish. Slice into wedges and serve.

This is one of our favourites now. My son who has texture issues and can tell when I change things up from his normal food, has no idea this is made with cauliflower AND always ask for more. So healthy and delicious.
