One of the easiest, healthiest, and most delicious side dishes you’ll ever make!
In a large pot, bring the chopped up cauliflower to a boil and cook until it is very soft.
While the cauliflower is cooking, saute the chopped kale, garlic, and 1/4 teaspoon of kosher salt on medium high heat for 2–3 minutes in a large pan sprayed with cooking spray. Once the kale has wilted, remove it from the heat.
Add the cooked cauliflower to a large bowl, blender, or food processor. Puree the cauliflower until it is smooth.
Add the remaining salt, pepper, kale mixture, andParmesan cheese to the cauliflower puree and stir together.
