Description

A gluten-free and vegan lunch option to add variety to your healthy diet.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 teaspoon Dehydrated/Dried Minced Garlic
  • 1 teaspoon Sesame Seeds
  • 3  Green Onions, Thinly Sliced (white And Green Parts Separated)
  • 2 cups Chopped Baby Kale
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • ½ Tablespoons Crushed Pepper
  • ½ teaspoons Cumin Powder
  • 1 teaspoon Salt
  • 3 cups Cooked Brown Rice
  • 1 Tablespoon Hemp Seeds

Preparation

Heat oil in a pan over medium heat. Add garlic and sesame seeds. As soon as they start getting brown turn heat to low and add white portion of the green onions/spring onions/scallions.

Sauté for few minutes over the low flame then add kale and sauté until it starts to wilt. Then add black beans. Mix well.

Mix in all the spices and sauté again for few minutes. Toss in green portion of the green onions/spring onions/scallions and sauté again.

Add brown rice and mix well so that the rice is fully coated. Cover and cook for 3 minutes or until done.

Dish it out on a serving plate and garnish with hemp seeds. Serve hot.
