Description

Gluten-free Black Bean and Veggie Burgers, served on a gluten-free bun (or lettuce wrap, if desired) with your choice of condiments and toppings.

Ingredients

  • ½ whole Small Onion
  • 1 clove Garlic
  • 1 can (19 Oz. Size) Red Kidney Beans, Drained And Rinsed
  • ½ cups Almond Meal
  • ¼ cups Gluten Free Flour, Plus More To Coat Burger
  • ¼ cups Parsley
  • 1 whole Large Egg
  • 1 dash Lime Juice
  • 1 pinch Salt And Pepper, to taste
  • ½ cups Corn (Or Any Diced Vegetable)

Preparation

1. In a food processor using the S-shaped chopping blade, pulse onion and garlic into small pieces.
2. Add remaining ingredients, except corn (or other vegetable), and process until mixed with your desired texture.
3. Scrape mixture into a mixing bowl, stir in corn (or other vegetable), then divide into 6 sections.
4. Place a small amount of gluten-free flour on a plate.
5. Work each section of the mixture carefully to form a patty. Gently coat patty in flour (work carefully, burgers will be very delicate).
6. Once all patties are formed, fry them a few minutes on each side in an oiled nonstick skillet over medium heat.

Serve on a gluten-free bun, toasted gluten-free bread, or wrapped in lettuce.

Note: This recipe works well with black beans too.
