An easy vegetarian and gluten-free hash loaded with fresh veggies, a fried egg, and lots of flavor! This is my go-to on busy weeknights.
Heat 1 tablespoon (or 3 teaspoons) oil in a skillet over medium heat. Add onion and peppers and saute until softened, about 5 minutes.
Add Swiss chard and cook until wilted, about 2 minutes. Season with spices. Add salt and pepper to taste.
Meanwhile, heat remaining teaspoon olive oil in a skillet over medium heat. Crack eggs in the skillet and cook them to your liking, seasoning with salt and pepper to taste.
Divide the hash between plates, top with fried egg, and serve.
