Description

One of the absolute best dinners I make. So easy, just a few ingredients and you can throw this together for dinner super fast. Not only is it super healthy, high in fiber and protein, but this recipe is also gluten-free!

If you want to make the tacos taste even better, I suggest frying the taco shells in coconut oil, but the less messy and healthier way is to just toast them on your stove top.

Ingredients

  • 1 pound Ground Turkey
  • 1 cup Frozen Corn
  • 1-½ cup Your Favorite BBQ Sauce (I Use Trader Joe's
  • 10  Corn And Wheat Tortillas
  • ¾ cups Coconut Oil (Optional, If You Wish To Fry The Taco Shells)
  • ¾ cups Feta
  • 1 cup Chopped Cabbage
  • Hot Sauce, to taste

Preparation

In a sauce pan, cook the ground turkey. Add the corn and BBQ sauce.

You can make the taco shells two ways: either toast the tortillas on your stove top burners or fry each taco shell in coconut oil.

Once taco shells are warmed, in each taco shell assemble BBQ turkey, feta, cabbage and hot sauce.
