Description

Tangy meets creamy in this simple chicken salad for one. Just 10 minutes total prep time. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free.

Ingredients

  • 2 Tablespoons Bacon Crumbles, Warmed
  • 3 ounces, weight Cooked Chicken Breast, Cubed
  • 1 slice Red Onion, Sliced Thin And Chopped
  • ¼ whole Medium Hass Avocado, Cubed
  • 1 ounce, weight Grape Tomatoes, Halved
  • 1 Tablespoon Cilantro, Chopped Fine
  • FOR THE DRESSING:
  • 2 Tablespoons Best Foods/Hellman's Real Mayonnaise
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Mrs. Dash Fiesta Lime Seasoning (See Note)

Preparation

If bacon crumbles were stored in the refrigerator or freezer, put in small mixing bowl and warm in microwave for 15–20 seconds.

Cut all of the remaining salad ingredients and add to the mixing bowl with the bacon crumbles.

Make the dressing, pour over salad, and mix well.

Serve in a bowl as a salad, or spoon onto lettuce cups.

Note: If you can’t find Mrs. Dash Fiesta Lime Seasoning, try using a favorite salt-free taco seasoning to taste.

Tip: I use leftover chicken or a grocery store roasted chicken for this salad to keep it simple and quick. If you want to make this ahead, you can make several servings without the avocado, then add avocado at the time you serve the salad.
