Description

Cranberry sauce (or sugar free jam) makes a wonderful, fruity One Minute Muffin. I like these for breakfast, and since I freeze extra cranberry orange sauce in the fall, I can make them all year. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten free, low sodium, low potassium, CKD/Renal Diet friendly, dairy free option.

Ingredients

  • 1 Tablespoon Butter, Melted (or Coconut Oil)
  • 1  Large Egg
  • ½ teaspoons Vanilla Extract
  • 4 drops Orange Oil (Or 1 Teaspoon Orange Extract)
  • 2 Tablespoons Bob's Red Mill Organic Flax Meal
  • 2 Tablespoons Blanched Almond Flour
  • 1 Tablespoon Swerve Granular
  • 1 Tablespoon Just Like Sugar Brown (Or 1/2 Tablespoon Sukrin Gold)
  • ½ teaspoons Rumford Baking Powder
  • 1 Tablespoon Pecans, Rough Chopped
  • 1 Tablespoon Sugar Free Cranberry Sauce (See Notes)

Preparation

Melt butter in the microwave in a wide mouth mug. Add egg, vanilla, and and orange oil/extract. Mix well with a fork.

Add all of the dry ingredients and nuts, and mix well, scraping the bottom of the mug. Plop the cranberry sauce on top, and spread just a little bit.

Microwave on high for 1 minute. Top of muffin should look done. If it’s still wet on top, continue cooking for 10 second increments until top looks done.

As the muffin bakes, it puffs up and covers the cranberry, so you have a swirl of hot cranberry sauce running through the middle. Careful, that filling is hot!

Notes:
• If you don’t have sugar free cranberry sauce, use any sugar free jam, omit the brown sugar substitute and orange oil/extract.
