Description

These cupcakes are egg-free and virtually fat-free. And they still taste great! Try this low-calorie dessert tonight and enjoy it guilt-free!

Ingredients

  • 1-½ cup Flour, All Purpose Or Whole Wheat
  • ½ cups Sugar
  • ½ cups Sugar Substitute (I Used Splenda)
  • 3 Tablespoons Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ Tablespoons Salt
  • 1 Tablespoon White Vinegar
  • 3 Tablespoons Fat Free Sour Cream
  • 1 teaspoon Vanilla
  • 3 Tablespoons Applesauce (unsweetened)
  • 1 cup Water
  • ¼ cups Chocolate Chips (optional)

Preparation

Preheat the oven to 350 degrees F.

Sift the dry ingredients (the first 6 listed on the above) into a medium bowl and combine. Make four wells in the dry ingredients. Pour the vinegar into the first well and spoon the fat-free sour cream into the second well. In the third well, pour the vanilla and in the fourth well, pour the applesauce.

Pour the water over all and whisk until well combined. Add the chocolate chips if you are using them.

Scoop the batter into a greased or lined muffin pan. Fill cups 2/3 full. Bake for 20-25 minutes.

When they are cool, add frosting if you wish, but they are even good plain. I like to eat them with raspberry jam.

I loved these so much I thought I’d put them in the freezer and have just one a day….yeah, right!!!!! Yummy!
