Description

Made with seitan, this is a delicious, creamy salad. Feel free to add celery, or any other ingredient you enjoy in a salad. It may be eaten plain, in a wrap, or served over greens. I make my own seitan, but the store-bought kind would be equally as good.

Ingredients

  • 16 ounces, weight Seitan
  • ½ cups Vegan Mayo
  • 2 teaspoons Red Wine Vinegar
  • 2-¼ teaspoons Agave Nectar (or Honey)
  • ½ cups Red Grapes
  • 1 whole Green Onion
  • ½ cups Pecans, Toasted And Chopped

Preparation

1. Dice seitan into bite-sized cubes. Saute in an oiled skillet, over medium heat until brown all over (about 8 minutes). Set aside to cool slightly.
2. In a large bowl, whisk together mayonnaise, vinegar, and agave nectar.
3. Toss seitan, grapes, onion, and pecans in with the dressing.

Chill 30 minutes before serving.

My first time to eat Seitan and loved it! This recipe is really good and easy! Next time I think I’ll add a bit more grapes and onions but other than that I love it!
