Description

You might be wondering how I got that beautiful green color without using food coloring. Well, I used spinach! But I promise you, you cannot taste the spinach at all!

Ingredients

  • ¼ cups Baby Spinach, Stems Removed
  • ⅓ cups SO Delicious Coconut Milk, Plus More As Needed
  • 1 pint SO Delicious Dairy Free Vanilla Bean Ice Cream
  • 2 teaspoons Peppermint Extract
  • 1 Tablespoon Enjoy Life Dairy Free Chocolate Chips

Preparation

1. Place spinach and coconut milk into blender and blend until completely smooth. Scrape down bowl as necessary.

2. Add ice cream and peppermint extract, blend till smooth. Add more milk as needed to help facilitate blending.

3. Add the chocolate chips and blend a few seconds, leaving some small pieces of chocolate.

Makes 1 large or 2 small shakes.
