Description

This is my ‘go-to’ spread for any sandwiches, wraps, or pizzas, when a cheesy kick is needed. For cashews, only some brands are in fact raw (do to the processing), so it is important to be aware of which ones you are buying (if you are worried about the raw element). You can also use any creamy, white nut, such as a macadamia nut, or pine nuts for this spread. This spread is great as a dip or on sandwiches.

Ingredients

  • 1-½ cup Cashews, Soaked In Water For 2 Hours, Drained
  • ¼ cups Water
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Apple Cider Vinegar (you Can Also Use All Lemon Juice)
  • 1 clove Garlic, Minced
  • ¼ cups Nutritional Yeast Flakes
  • ½ teaspoons Salt
  • 1 pinch Pepper

Preparation

In your food processor or blender, process or blend all of the ingredients together until smooth. Add additional lemon juice, vinegar or garlic, depending on your taste.

This looks great! Question though, what kind of cheesy flavor does it have? (Cream cheese, cheddar, etc.?)

I made this tonight and it was SOOOO good! I was excited to find something I could use on my jalapeño popper grilled “cheese”. I let my hubs try it and even he liked it. I ended up adding 2 more tablespoons of nutritional yeast, salt and some cayenne pepper. Thank you for sharing!!
