Description

Coffee flour is a good source of potassium, which is generally hard to get in a low carb diet. This delicious creamy, egg-free, dairy-free breakfast pudding is high in fats and relatively high in potassium, making it a great choice for a satisfying LCHF breakfast or snack. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten free, dairy free, egg free, nut free, low sodium, low potassium, CKD, Renal Diet.

Ingredients

  • ½ cups Dream Blends Coconut Almond & Chia Drink (or Other Dairy Substitute)
  • ½ cups Arroyo-D Coconut Cream (or Other Full Fat Coconut Cream)
  • 2 Tablespoons Walden Farms Pancake Syrup (or Other Sugar Free Syrup)
  • ½ teaspoons Vanilla Extract
  • 3 Tablespoons Ground Chia Seeds
  • 1 Tablespoon Just Like Sugar (Brown)
  • 1 Tablespoon Coffee Flour
  • 1 Tablespoon Instant Coffee Crystals/Powder
  • 2 Tablespoons Hemp Hearts
  • ¼ Tablespoons Cinnamon
  • Pinch Of Salt

Preparation

Put all ingredients in a small blender in the order listed. Pulse until well blended and creamy.

Wait about 3–5 minutes for the pudding to thicken, and pulse again to make sure the hemp hearts are dispersed throughout and not all on the bottom.

Pour into serving containers (I use 6-ounce ramekins with lids). Refrigerate overnight.

Serving suggestion: Garnish with fresh sliced berries, nuts, or unsweetened coconut flakes. Be sure to count carbs for any add-ins.
