Description

A nutritional powerhouse of yum.

Ingredients

  • 1 cup Rinsed Uncooked Lentils
  • 4 cups Vegetable Broth
  • 2 whole Medium Sweet Potatoes
  • 1 teaspoon Turmeric
  • 14-½ ounces, weight Fire-roasted Tomatoes (canned)
  • 2 teaspoons Fresh Minced Ginger
  • 3 Tablespoons Oil
  • 1 Tablespoon Butter
  • 2 cloves Garlic, Minced
  • ½ whole Yellow Onion, Sliced Thinly
  • 2 whole Jalapenos, Ribs And Seeds Removed, Minced
  • ½ whole Green Cabbage, Thinly Shredded
  • ⅔ cups Regular Coconut Milk
  • Fresh Chopped Cilantro, For Garnish

Preparation

Pour lentils, broth, and sweet potatoes into a large pot. Bring to a boil and then simmer on low for 30-45 minutes, or until lentils and sweet potatoes are just barely done cooking. Add the turmeric, tomatoes and ginger to the pot and cook for another 10 minutes.

Heat the oil and butter in a large skillet. Add garlic, onions, and jalapenos. Saute for 2-3 minutes. Add the cabbage and cook for 10 minutes, or until cabbage is cooked through.

Add cabbage to lentil pot and stir in coconut milk. Top with cilantro.

Notes: The turmeric is important because it helps with flavor, but also with the bright yellow color. Without it, the color of the dish starts to look a little dull.

Made this for dinner tonight with homemade Naan & it was great! I added an extra can of tomatoes. I think I’ll throw in some fresh spinach when I make it again.

This is an excellent dish with wonderful flavors. We were craving yams and it hit the spot. Will definitely do this again many times.

I thought this was a little bland. Definitely needed more salt, but also more seasoning/flavor overall. Probably won’t try again.

Amazingly good! I accidentally added 1 lb of lentils instead of 1 cup, and it was still totally delicious. I substituted spinach for the cabbage, and everyone loved the dish!

This was really good. I added chicken (for the husband) and left out cabbage because we aren’t fans. The only thing I didn’t like was the look of it a day later because it looked like mush. It was still delicious!

Had this last night with garlic naan. Yum. It was really great, but I was worried about the heat of it so only used one jalapeno – well next time I would use two. Also might try it with some spinach in next time. Thanks for the recipe!
