Meatless tortilla soup! An easy recipe with only a few ingredients. Perfect winter dinner!
1. Heat olive oil on medium-high in a large soup pot or Dutch oven. Add the celery, carrots and onion. Cook until vegetables are softened, approximately 5 minutes.
2. Add chickpeas, tomatoes, broth and spices and stir to combine. Heat and stir occasionally until the soup thickens slightly, about 20 minutes.
3. Season with salt and pepper and enjoy!
