Description

My husband and I are currently on a serious weight loss program. I needed to come up with a low fat, high protein dish to take to a friend’s house for dinner. It was a huge hit and no one guessed that it was so low in fat and sodium.

Ingredients

  • 1 pound Boneless, Skinless Chicken Breast.cooked And Diced
  • 2 cups Brown Rice-instant Or Regular
  • 1 bag (6 Oz. Bag) Baby Spinach
  • 1 can (14 Oz. Can) Artichoke Hearts, Chopped
  • ½ cups Fat Free Greek Yogurt
  • 2 pieces (about .75 Oz. Each) Laughing Cow Light Cheese
  • ¼ cups Minced Onion
  • ½ cups Parmesan Cheese. Shredded, Divided
  • ½ teaspoons Black Pepper
  • ½ teaspoons Garlic Powder

Preparation

Preheat oven to 350 degrees. Cook the rice according to package directions. In a large bowl, combine the hot rice and the spinach. Stir until the spinach wilts. Add the rest of the ingredients except 1/4 cup of the parmesan cheese, stir well and place in a 9 x 12 greased pan. Top with the remaining parmesan cheese. Bake for 30 minutes until hot and bubbly.

I am very new to cooking. I thought I would try this out, it looked easy enough. I gave it a try and it turned out great. My husband loved it and was thrilled I was finally giving cooking a try. He has done all of the cooking in 13 years so he was really looking forward to trying it out. I’m so glad I finally decided to give cooking a try it’s actually pretty fun. Thanks.

This was very good! I’m on a vegetarian diet (for medical reasons), so I substituted Quorn brand “naked chicken cutlets” (meatless) for the chicken breast. It was a little more peppery than I care for, so next time I will cut back on that, but there DEFINITELY will be a next time. Thanks!! Loved it : )

Wow, this is great! I made it this evening and I love it!
I added some diced red bell pepper and some sliced black olives and threw in some sea salt. This recipe is a keeper, even my 6 year old son is loving it.

Really tasty; very hearty and filling. I would highly recommend adding some salt, though, if you do not have a sodium restriction in your diet. It really needs it to enhance the flavors. Also, next time I make it I might be a little more generous with the yogurt, as the leftovers were a bit dry. Overall, yum!

It needed more flavor so I added some no sodium seasoning blend to it to kick it up a notch.
