Breakfast burritos.

Ingredients

  • FOR THE BURRITOS:
  • 6-¼ ounces, weight Firm Tofu, Sliced Into Strips
  • 1 Tablespoon Olive Oil
  • ½ whole Medium Onion, Sliced Into Strips
  • 2 cups Savoy Cabbage, Sliced Into Strips
  • ½ heads White Cabbage, Sliced Into Strips
  • 3 whole Small Carrot, Sliced Into Strips
  • 3 whole Zucchini, Sliced Into Strips
  • 2 whole Medium Green Pepperoni, Sliced Into Strips
  • 1 Tablespoon Chives, Finely Chopped
  • 4 whole Whole Wheat Tortillas
  • FOR THE GUACAMOLE:
  • 1 whole Avocado
  • 1 whole Medium Green Pepperoni (sliced Into Thin Strips)
  • 1 whole Medium Onion, Sliced Into Thin Strips
  • Salt And Pepper
  • 1 whole Lime

Preparation

Heat oven to 200°C (390°F).

Place sliced tofu on a baking tin in the oven and bake for 8 minutes.

Heat a little oil in a large pan and brown onion. Add the rest of the vegetables into the pan and cook for 8 minutes.

For the guacamole, peel avocado and smash the pulp. Mix avocado pulp with pepperoni and onion slices in a small bowl. Mix in oil, salt, pepper and lime juice.

Lay down the tortillas on a chopping board. Add vegetables and tofu and roll up. Slice tortilla in half and serve.

Dip every bite of your tortilla in the guacamole sauce.
