Description

These tacos are quick and full of protein and fiber. You won’t miss the meat! If you don’t have the tempeh, just use extra cumin.

Ingredients

  • 1 can (15.5 Oz. Can) Black Beans, Rinsed And Drained
  • 1 can (4 Oz. Can) Green Chilies, Diced Small
  • ¼ cups Frozen Or Canned Corn
  • 1 can 15.5 Oz. Fire-roasted Tomatoes (partially Drained)
  • 2 strips Fakin' Bacon Smoked Tempeh
  • 2 Tablespoons Hot Chili Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • ¼ cups Water

Preparation

Add everything to a sauce pan and cook over medium to medium-high heat for 10 minutes. The beans will start to break down and mash. Serve over salad or with your favorite taco toppings in a shell.

These were somewhat disappointing. Just having black beans and corn doesn’t give the taco much substance and we added tons of refried beans and pico de gallo on it. The chili pepper powder is overwhelming and probably could take about half of the written amount.
