Description

Adapted from a favorite family fudge recipe, this sugar free version is very rich, soft and chocolaty. Just the way you want fudge to be! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, coconut free, nut free if pecans omitted. CKD/Renal Diet friendly.

Ingredients

  • 1 cup Swerve Confectioners (powdered Erythritol)
  • 3 ounces, fluid Nestle Media Crema
  • ¼ teaspoons Salt
  • ¼ cups Chopped Pecans, Divided
  • 5 ounces, weight LC Foods Dark Chocolate Chips (Or Other Sugar Free)
  • ½ cups Walden Farms Marshmallow Dip (See Notes)
  • ½ teaspoons Vanilla Extract
  • 2 Tablespoons Butter, Cut Into Cubes

Preparation

Butter a 4×6 pan. Cut a strip of parchment or waxed paper wide enough to cover bottom of pan, and long enough to hang over both sides. Set aside.

In a large pot, add sugar, crema and salt. Cook and stir over medium heat until it comes to a rolling boil. Boil for 8 minutes, stirring constantly to avoid sticking or burning.

Add half of the pecans and all of the remaining ingredients. Stir well, pour into buttered pan. Sprinkle remaining pecans over the top.

Cool on a wire rack, then put in refrigerator to finish setting up. When fully set, run knife along uncovered edges of pan, lift fudge carefully out of dish and onto a cutting board (or cut into pieces while still in the pan, and then lift out). Cut into 20 pieces: 4 slices on short side, 5 slices on long side. Store in refrigerator or freezer.

Yields 20 squares of about 1 inch each.

Notes:
• If you can’t find the Walden Farms Marshmallow Dip, omit it. The fudge will be a little grainier and perhaps not as creamy. Try increasing the crema to 4 ounces and add a little more sweetener. It should still set up.
