Description

Spring and summer strawberries are the stars of this big meal salad. Strawberries in the salad, and strawberry flavored balsamic dressing give a burst of fruity flavor in every bite. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, coconut free, Paleo.

Ingredients

  • 1 Tablespoon Bacon Crumbles (Or 1 Slice Bacon Fried And Crumbles)
  • 2 cups Baby Spinach Leaves
  • 1  Thin Slice Red Onion, Chopped
  • 3 ounces, weight Cooked Chicken Breast, Cubed
  • 1 Tablespoon Sliced Almonds (Sunflower Seeds For Nut Free)
  • FOR THE DRESSING:
  • 2 Tablespoons Bacon Grease
  • 1 teaspoon Smucker's Sugar Free Strawberry Preserves
  • 1 Tablespoon Bragg's Apple Cider Vinegar
  • 1 teaspoon Balsamic Vinegar
  • ½ teaspoons Dijon Mustard
  • ⅛ teaspoons Garlic Powder
  • 2 dashes Coarse Black Pepper

Preparation

In a small bowl, warm the bacon crumbles in the microwave for about 15 seconds. Set aside.

In a large bowl, layer the salad ingredients, add the bacon crumbles and top with sliced almonds or seeds.

In small glass measuring cup, melt the bacon grease and sugar free preserves together in the microwave (20 seconds or so). Add the remaining dressing ingredients and mix well.

Drizzle warm dressing over the salad. Serve.
