Description

A quick microwave cheese dip that requires no baking or stovetop cooking. Thin it for a tasty cheese sauce to serve over vegetables, low carb nachos, or whatever sounds good to you. Great game day snack! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, vegetarian, low potassium, low sodium, CKD/Renal Diet.

Ingredients

  • 4 ounces, weight Philadelphia Cream Cheese Original, Softened
  • 2 Tablespoons Heavy Whipping Cream
  • 4 Tablespoons Dream Blends Unsweetened Coconut Almond Chia Drink (or Nut Free Milk Substitute)
  • 1-½ cup Shredded Sharp Cheddar Cheese
  • ½ cups Boars Head Three Pepper Colby Jack Cheese (or Other Spicy Cheese), Shredded
  • 1  Green Onion, Sliced, For Garnish
  • 1 Tablespoon Chopped Cilantro, For Garnish

Preparation

For the dip:
In a large glass measuring cup or bowl, soften cubed cream cheese in the microwave for about 40 seconds on high. Whisk in heavy cream and milk substitute until smooth. Stir in cheddar cheeses. Microwave on MEDIUM power for about 2 minutes or until the cheese is completely melted, stirring after 1 minute.

If using as a dip, transfer to serving dish, and top with chopped onion and cilantro for serving. Serve with a variety of sliced vegetables, salami, or low carb crackers for dipping.

If using as a sauce, transfer mixture (omit green onions and cilantro) to gravy boat, small pitcher, or smaller measuring cup. Pour over steamed vegetables, low carb chips, or even meats.

May be stored in the refrigerator for up to a week. Do not freeze. Reheat in microwave for only one minute at a time, stirring well after each minute. Do not over-heat or cheese will burn.

Yields approximately 1 1/2 cups of dip (slightly more for sauce). Each serving is about 3 tablespoons.

Notes:
1. For a spicier dip/sauce, reduce the amount of sharp cheddar, and increase the amount of spicy pepper cheese. Or add some crushed red peppers to the sauce while heating.
