Description

A 5-minute snack that’s easy for kids to make, and great for lunch box, game day, parties, or whenever a refreshing tropical treat sounds good. One serving is a nearly zero carb fat bomb, too! Change up the flavors to suit your taste. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, Paleo, nut free if macadamias are omitted, kid friendly, lunch box.

Ingredients

  • 1 cup Unsweetened Coconut Flakes
  • ¼ cups Unsweetened Shredded Coconut
  • ¼ cups Salted Macadamia Nuts, Chopped (Omit For Nut Free)
  • ¼ cups Confectioner's Swerve (powdered Erythritol)
  • 2 Tablespoons Virgin Coconut Oil, Melted
  • 2 Tablespoons Lime Juice

Preparation

Line a 5 x 7 inch baking dish (or similar dimensions) with waxed paper or cling wrap.

In small mixing bowl, stir coconut flakes, shredded coconut, chopped nuts, and powdered Swerve.

In a small bowl, melt coconut oil in the microwave. Add lime juice and stir. Pour over coconut mixture and stir to coat all of the coconut and nuts.

Turn out into the 5×7 dish. Press to flatten. Put in freezer for about 20 minutes, long enough to get the coconut oil set up firm again.

Cut or break into 8 servings. Store in refrigerator or freezer.

Note: Use any flavoring you want in place of the lime juice. This would be delicious with any citrus flavor. Or try using a squirt of one of the many water flavorings to add both flavor and color (with a little water to make up the liquid from the lime juice exchange). This is a fun recipe for kids to make and experiment with.
