Description

The humble list of ingredients may not seem like much, but this gorgeous green minty concoction falls somewhere between an ice cream shake and whipped cream. For only 100 calories, it’s so, so good!

Ingredients

  • 1 whole Large Banana, Frozen
  • 2 whole "mini" Cucumbers, Or 3/4 Of A Large One
  • 3 drops Peppermint Extract (or Up To 8, To Taste)
  • 1 Tablespoon Maple Syrup (optional)
  • 2 Tablespoons Grain-sweetened Chocolate Chips, Or Any Other Kind (optional)

Preparation

Chop frozen banana and cucumber(s) into slices. Throw into a mini food processor or blender along with the peppermint extract and process until thoroughly creamy and airy. Eat with a spoon, or drink with a straw.

This is 100 calories without any of the optional mix-ins. I love it as is, but if you prefer more sweetness or a mint chip shake, add the maple syrup and/or chocolate chips.
