Description

A really tasty soup that’s packed full of goodies!

Ingredients

  • 1 Tablespoon Olive Oil
  • 4 cloves Garlic, Minced
  • 1 whole Small Onion, Minced
  • 3 whole Small Zucchini, Minced
  • 4 cans Vegetable Broth, (14.5 Oz Cans)
  • ½ teaspoons Oregano
  • 16 ounces, weight Hummus (store Bought Or Homemade)
  • Salt To Taste
  • Pepper To Taste
  • Lemon Juice To Taste
  • 8 ounces, weight Pasta (whatever Type You Prefer In Soup)
  • Shredded Parmesan To Garnish

Preparation

1. In a large pot, heat oil over medium heat. Add garlic and onion and cook for two minutes, stirring frequently.

2. Add zucchini and cover the pot. Cook for about 4 minutes, stirring occasionally.

3. Add the vegetable broth and oregano and bring the mixture to a boil. Cover and reduce heat. Simmer for about 20 minutes.

4. Remove pot from heat and puree the soup mixture using an immersion blender.

5. After the zucchini mixture is pureed, use the immersion blender to mix in the hummus.

6. Return pot to the stove and gently heat over medium-low heat.

7. Add salt, pepper and lemon juice as desired.

8. Add pasta and cook for 10 minutes or according to the timing on the package of your preferred pasta. Remove from heat.

9. Garnish with Parmesan before serving.
