Description

My family LOVES this Chicken Chili. The single recipe is really small, so if you have a family of four or more, you’ll probably want to at least double or triple it.

Ingredients

  • 1 whole Small Onion, Chopped
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Olive Oil
  • 1 whole Jalapeno, Minced
  • 4 ounces, weight Can Chopped Green Chilis
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • ½ teaspoons Cayenne Pepper
  • ½ teaspoons Salt
  • 1-½ cup Chicken Broth
  • ⅔ cups White Beans, Rinsed And Drained
  • 8 ounces, weight Cooked Chicken Breast, Shredded
  • ¼ cups Cilantro
  • ½ cups Monterey Jack Cheese

Preparation

Saute onion and garlic in olive oil until tender. Add jalapeno, green chilis, cumin, oregano, cayenne pepper, and salt. Saute together for another minute. Stir in chicken broth, beans and chicken. Bring to a boil, cover and let simmer for 30 minutes.

Top with cilantro and cheese.

Super!! Perfect amount of heat, though I did omit the jalapeno peppers – otherwise cooked exactly as written … perfect consistency and just so tasty and easy, I’ll have to make it again and again :-)
