Description

A creamy chili, full of chicken, great northern beans, and flavorful spices.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 pound Boneless, Skinless Chicken Breasts, Chopped
  • 1 whole Medium Sweet Onion, Chopped
  • 2 cloves Garlic, Minced
  • 31 ounces, weight Canned Great Northern Beans, Drained
  • 15 ounces, fluid Canned Chicken Broth
  • 8 ounces, weight Canned Chopped Green Chiles
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • ¼ teaspoons Cayenne Pepper
  • ½ teaspoons Each, Salt And Pepper (adjust To Taste)
  • 1 cup Sour Cream
  • ½ cups Heavy Cream (optional)
  • ¼ cups Shredded Monterey Jack Cheese (optional For Serving)

Preparation

Place the oil in a large pot over medium high heat. Once hot, add the chicken, onion, and garlic and cook until chicken is browned and no longer pink. Then add the beans, chicken broth, chilies, and seasoning and stir. Bring the contents of the pot to a boil, then reduce the heat and simmer uncovered for 30 minutes.

Turn off the heat and stir in the sour cream and whipping cream (if using). Cook until heated through. Serve immediately, topping with shredded cheese if desired.

I doubled the recipe. Prior to getting under way I used about 3 tbsp. of olive oil to sautéed my onions then added the garlic, black pepper and salt. After further sautéing this mixture, I took up the doubled recipe and knocked it out!
Btw – served it over rice ~ Awesome ~
