Description

This is one of the tastiest soups ever! I was really pleased with how this turned out. It disappeared quickly!

Ingredients

  • 1 pound Package Jimmy Dean Pork Sage Sausage
  • 3 Tablespoons Olive Oil
  • 2 whole Medium Onions, Diced
  • 12 whole Baby Carrots Sliced
  • 2 whole Medium Celery Stalks, Diced
  • 1 teaspoon Thyme
  • 3 whole 16 Oz. Cans White Beans, Un-drained
  • 2 cans (14 Oz. Size) Chicken Broth

Preparation

1. Brown sausage in skillet over medium heat and once browned, and set aside.

2. Over medium heat, brown onions, carrots and celery in olive oil with thyme for 10 minutes in a stock pot.

3. Mash one can of un-drained white beans in a separate bowl.

4. Add chicken broth, all of the beans (the mashed and non-mashed) and the cooked sausage to stock pot.

5. Bring to simmer with lid on.

6. Uncover and simmer for 30 minutes.

Made this tonight. Followed directions. Flavor was awesome. I think this would be good with ham as well. Will definitely make again.

So quick and easy. I did it without the sausage (didn’t have any), and it was still really good. I would maybe only use 1 onion, but the onion flavor was tasty.
